Paring

Ninety Plus CellarsCôtes de Provence Rosé

The key to pairing wine with any artichoke dish is to choose a wine that is dry, light and crisp, with high acidity. Ninety Plus Cellars Côtes de Provence Rosé fits the exact description and is a perfect pairing for any backyard barbeque that includes artichokes.

Recipe

Grilled Artichokes

Prep time: 15-20 minutes
Cook time: 45 minutes

Ingredients

  • 1 tablespoon chopped fresh herbs such as rosemary, oregano, thyme
  • 1/3 cup extra virgin olive oil
  • 2 cloves garlic, cut in half (no need to peel)
  • 1 bay leaf
  • 1 lemon, cut into wedges
  • 2 to 4 large artichokes
  • Salt

Instructions

  1. Fill a large bowl with cold water. Squeeze the juice from one lemon wedge into the water. Trim the tops from the artichokes, then cut in half lengthwise, and place halves into the bowl of lemon water to prevent them from turning brown
  2. Bring a large pot of water to a boil. Meanwhile, preheat an outdoor grill for medium-high heat.
  3. Add artichokes to boiling water and cook for about 15 minutes.
  4. Drain. Squeeze the remaining lemon wedges into a medium bowl. Stir in the olive oil and garlic, and season with salt and pepper.
  5. Brush the artichokes with a coating of the garlic dip and place them on the preheated grill.
  6. Grill the artichokes for 5 to 10 minutes, basting with dip and turning frequently, until the tips are a little charred.

Serve immediately with the remaining dip.
